'Mijni' refers to sprinkling water over besan and rubbing it between the palms to create small, granulated texture particles. It is a traditional and comforting dish from Uttar Pradesh and Rajasthan (where it is also called 'Meeda'). It serves as a lifesaver when no green vegetables are available.
When these tiny besan pearls are simmered in a rich, spicy onion-tomato-ginger-garlic gravy, the dish easily beats paneer and traditional gatta curries in taste. Here is how you can easily whip this up at home.
Ingredients and Step-by-Step Cooking Guide
Ingredients: 1 cup besan, 2 tbsp oil for roasting, 2 tbsp oil for tempering, 2-3 tbsp water, 2 medium chopped onions, tomato-ginger-green chili paste, cumin seeds, asafoetida, turmeric, red chili powder, garam masala, salt, and fresh coriander leaves.
Method:
- Making the Mijni: Take 1 cup of besan in a wide plate. Mix a pinch of salt and turmeric. Sprinkle water gradually and rub with your fingers to form small, crumbly granules (do not knead into a dough).
- Roasting: Heat 2 tbsp oil in a pan, add the prepared mijni, and roast on medium flame for 3-4 minutes until golden and aromatic. Remove and keep aside.
- Preparing the Gravy: Heat another 2 tbsp oil, splutter cumin and asafoetida, add onions and sauté until golden. Add the tomato-ginger paste and dry spices, cooking until oil separates.
- Simmering: Add 1.5 to 2 cups of water to the masala and bring to a boil. Add the roasted besan mijni, cover, and let it simmer for 7-8 minutes until soft and flavorful. Garnish with coriander and serve hot with rotis or rice.
