The Food Safety and Standards Authority of India (FSSAI) has cracked down on a major five-star hotel in New Delhi, issuing a strict rectification notice over glaring violations of food safety, hygiene, and sanitation protocols. The hotel, operated by M/s AB Hotels Limited, has been directed to take immediate corrective actions and submit a detailed compliance report.
Severe Lapses in Premises and Hygiene Standards
During the inspection, authorities uncovered alarming levels of negligence. According to the notice, rusted machinery and leaking freezers were found on the premises, along with inadequate temperature control systems. Deficiencies were also noted in lighting, ventilation, flooring, and overall cleanliness.
Inspectors observed stagnant water, poor drainage systems, and improper handling of food waste. Pest control measures were found to be grossly inadequate, with live cockroaches and flies actively roaming around food preparation zones, posing a direct threat to public health.
Questions Raised Over Sourcing and Cooking Oil
The procurement and storage of food items also came under scrutiny, with authorities discovering moldy and decayed fruits and vegetables in the kitchen. Records regarding approved vendors and traceability of ingredients lacked transparency.
Furthermore, the Total Polar Compounds (TPC) levels in the cooking oil used at the NYC kitchen were recorded at alarming figures without mandatory quality checks. Raw and cooked foods, vegetarian and non-vegetarian items, as well as allergens, were not segregated properly.
Strict Warning of License Cancellation
FSSAI has mandated the management to provide documentary evidence and photographic proof of rectifications made. The regulatory body has warned that failure to comply with these directives will result in stringent legal action, including the potential suspension of the FSSAI license.
